It has been determined that the traditional methods of managing eggs, especially the selling of cracked eggs for food, pose a risk to the public's health. The way eggs are handled in the markets is subpar, according to the Ghana Standards Authority and the Ghana National Eggs Campaign Secretariat.

This was said at a workshop organised by the two organisations on Thursday in Kumasi. As a result, stakeholders in the egg manufacturing and marketing sector are urged to adhere to the requirements to make it easier to export the good to nearby nations.

Over 150 chicken farmers and egg dealers from the Ashanti area attended the two-day course. Participants learned about international standards at the session put on by the Ghana National Eggs Campaign Secretariat in association with the Ghana Standards Authority. Samuel Kwatia of the Ghana Standards Authority stated that dealers and purchasers must evaluate the weight, colour, and neatness of eggs while speaking about the basic demand for eggs.

"Although you don't make the eggs, you do have power over the outcome. Check for things like discoloration, brokenness, and other characteristics. We advise against returning the egg crates to the farmer whenever you purchase an egg. This lessens the spread of microorganisms in the egg business, he noted.

Standardization of eggs will enable exports to regional and global markets, according to Comfort Acheampong, coordinator of the Ghana National Eggs Campaign Secretariat.

"If they follow the criteria, this would assist our farmers in obtaining certification to sell across borders. The standard will enable egg vendors to market premium edible eggs, she claimed.

Victor Oppong Agyei, national chairman of the Ghana Poultry Farmers Association, reemphasized the necessity for farmers to handle eggs more carefully in order to prevent losses.

"Prices will decrease if the eggs are contaminated. Farmers must at least control the situation so that the eggs are always clean before they are sold. The shattered pieces must be removed from the eggs immediately; else, the entire egg will be ruined.

Mirabel Asomboya, a nutritionist from the Ghana Health Service, dispelled concerns about egg intake and highlighted some of its advantages.

Superfoods include eggs. They include antioxidants to help growth and development and more than 40 different minerals.
