Preparation of Egusi Soup


1. Prepare the proteins:


Wash the meat and stockfish, season with salt, seasoning cubes, and onions, then boil until tender. Reserve the stock.




2. Cook the egusi:


Mix the ground egusi with a little water to form a thick paste. Set aside.




3. Heat the oil:


In a pot, heat the palm oil and fry the chopped onions for 2 minutes.




4. Add egusi paste:


Scoop the egusi paste into the oil and fry for 5–7 minutes, stirring continuously until it crumbles and releases a rich aroma.




5. Combine ingredients:


Add the blended pepper and tomato mixture, stir well, and simmer for 5 minutes.


Add the boiled meat, stockfish, dry fish, and reserved stock. Stir and cook for 10 minutes.




6. Add vegetables:


Stir in the chopped spinach or ugu leaves and simmer for another 5 minutes. Adjust seasoning as needed.
