Level Up Your Lunch Game: My Meal Prep Journey (Feat. This Bowl!)


Okay, can we just take a moment to appreciate this bowl? Feast your eyes on this beauty! This isn't some fancy café lunch; this is my lunch, prepped and ready to go thanks to finally getting a handle on meal prepping.

What you're seeing here is my current obsession: a homemade Salmon Poke Bowl. We've got a base of fluffy rice, topped with vibrant, fresh salmon sashimi, creamy sliced avocado, crisp diced cucumber, and those fun little carrot ribbons I'm weirdly proud of mastering. A sprinkle of black sesame seeds ties it all together. It looks good, tastes incredible, and fuels me through the afternoon slump.

But let me tell you,getting to the point where lunches like this are a regular occurrence wasn't an overnight thing. My meal prep journey started, like many, with grand Sunday ambitions that often fizzled out by Tuesday. I cycled through phases: sad desk salads, endless containers of the same bland chicken and broccoli, and eventually, just giving up and grabbing whatever was quick (and often unhealthy).

The turning point came when I stopped trying to make everything perfect and focused on making things easier and enjoyable. I started small: prepping components instead of full meals, finding recipes I was genuinely excited to eat (like this poke bowl!), and accepting that some weeks would be better than others.


Now, dedicating a couple of hours on a Sunday to wash, chop, cook grains, and portion things out feels less like a chore and more like setting my future self up for success. Seeing colourful, delicious bowls like this waiting for me in the fridge is seriously motivating. It saves me time, money, and that daily "what am I going to eat?" stress.


So, if you're struggling with meal prep, take it from me: keep experimenting, find what you love, and don't be afraid to start simple. It might take time, but finding your rhythm is so worth it. Your taste buds (and your wallet) will thank you!
