How to Cook Eru – A Traditional Cameroonian Meal.
Eru is a traditional Cameroonian dish from the southwest region that the Bayangi people in particular, really love! Eru is made with Eru leaves (wild spinach) and waterleaf (use spinach instead if needed), prepared in one pot with a protein or a few types of meat, and some sort of fish that is smoked or dried, and flavored with palm oil and spices. Eru is eaten with garri (fermented cassava flour), or water fufu.
Ingredients: 500g Eru leaves (Fresh or dried) 1 kg waterleaf (or fresh spinach) 500g beef or kpomo (cow skin) 200g smoked or dried fish 1 cup crayfish (ground) 2 cups palm oil Pepper (to taste) Seasoning cubes and salt Water
Preparation Instructions: 1. Wash and soak the eru: If you have dried eru leaves, you'll want to soak them in warm water for several hours or overnight before washing. If you are using fresh leaves, you will need to wash and chop it into small pieces. 2. Prepare your waterleaf: Wash the waterleaf or spinach and chop some of the nodes (the kind of node you see in a "garden variety" of spinach). Be careful not to add a lot of water because you will be using waterleaf and waterleaf releases a lot of water. 3. Cook meat and fish: In a pot, boil the beef and kpomo along with the seasoning cubes and salt until it is tender. Add the smoked or dried fish and allow to cook for a few minutes more. 4. Get your waterleaf in there: Add the waterleaf leaves to the pot. Allow to wilt while stirring for 5 - 10 mins and so it starts to release its own water 6. Add eru leaves: Begin to slowly add your eru. Eru is fibrous and can be cooked with little water. Let it cook on low for about 10 minutes and stir occasionally. 7. Add crayfish and pepper:
After 10 minutes, add your crayfish and pepper to taste. 8. Add palm oil: Add tou lid palm oil and stir thoroughly. Let simmer gently for 10 minutes, after that the oil should have incorporated and leaves should have softened. 9. Taste and adjust seasoning. ---- Serve hot with garri or wild fufu. Eru is nutritious and tasty prepared mainly with vegetables and protein. Eru is enjoyed in homes and during celebrations in Cameroon.
