Ingredients
1 fresh sausage package (turkey, chicken, or other)
2 tbsp oil (vegetable)
1 quart of water
1 chopped onion
1 chopped bell pepper (optional)
1/2 cup tomato sauce or ketchup
Method
Heat the oil in a heavy-duty skillet or cast iron pot. At the halfway point, add the sausage and enough water to cover it. Cook over medium heat until the water has evaporated and the sausage has begun to color. Repeat the browning process on the other side.
After the sausage has browned on both sides, add the onions and pepper to the pan with the sausage and cook together (if you are using the tomato sauce add now).
Add enough water to produce gravy once the onions have turned color. Cook, stirring constantly, until the ketchup is well cooked.
Serve the sausage over heated rice, cut into bite-size pieces.
