How I Make My Easy Watermelon Ginger Granita
The first step is to remove the skin from the watermelon and cut it into chunks. It just makes it easier to puree in a food processor. It's important to do this in batches, as once it becomes liquid it can seep around the edges of your processor.

I break my ginger into chunks and freeze them for later use.Then, while it's still frozen, use the edge of a soup spoon to scrape off the papery outside. From there you can use a sharp knife to cut. That extra ginger nut goes back into a freezer safe bag for use again later!

Granita needs some maintenance. Once you've combined your watermelon juice and simple ginger syrup, pour into a freezer-safe bowl.I like these pyrex glass squares for this job. Set your timer for 30-40 minutes. Use a fork to scrape off any areas that have started to freeze.
Now set your alarm for the same 30-40 minutes until you've done it 3-4 times. You should have perfect little watermelon ice crystals!
