Easy Watermelon Ginger Granita 2
I like to serve this with a small slice of watermelon and/or a lime wedge, just for a little color and interest. You could go further and dip the rim of the jar before filling, then dip it in some sea salt. Very elegant!

Easy Watermelon Ginger Granita PIN

Ingredients:
1 personal-size seedless watermelon (a few small slices reserved for garnish) (about 1 1/2 cups juice)
lime juice
lime zest, plus a portion of lime for garnish
FOR SIMPLE GINGER SYRUP:
1/4 cup granulated sugar
3 tablespoons water
4 slices fresh ginger
Method:
watermelon dice in batches, process in food processor in batches until you have 1 1/2 cups of watermelon juice. You can strain it at this point if you like.Let cool down. Add a squeeze of lime juice if you like.
Meanwhile, in a small saucepan, add the sugar, water, and fresh ginger. Bring to a boil, then remove from heat and allow to cool. Strain the liquid into the watermelon juice.Discard the ginger slices.
Pour the mixture into a freezer safe dish such as Pyrex. Set the timer for 30-40 minutes.
Scrape off the frozen mixture with a fork. Set the timer back to 30-40 minutes, scrape and repeat this process 3-4 times until you get a granita.Serve in a chilled glass with a small slice of watermelon or lime.
OPTIONAL: If you wish, you can also rim the glass with watermelon juice and salt.
