How to Prepare Groundnut Soup (Peanut Soup)
Groundnut soup is a rich and flavorful Ghanaian dish made from roasted peanuts (groundnuts), spices, and either meat or fish. It is a staple in many homes and is often enjoyed with fufu, rice balls (omo tuo), boiled yam, or banku. The creamy texture and nutty flavor make it a favorite across various regions in Ghana.
Ingredients:
2 cups of roasted groundnuts (peanuts) or groundnut paste
1 kg of meat (goat, beef, chicken, or fish)
2 medium onions
2 tomatoes
1 tablespoon of tomato paste (optional)
2–3 scotch bonnet peppers
1 teaspoon of ginger (fresh or powdered)
1 teaspoon of garlic (optional)
Salt to taste
Seasoning cubes (optional)
Water
Preparation Steps:
1. Blend the Groundnuts
If using whole peanuts, roast and blend them into a smooth paste using a little water. If using already-prepared groundnut paste, skip this step.
2. Steam the Meat
Wash and season your meat with salt, chopped onions, ginger, garlic, and seasoning cubes. Steam over medium heat for 10–15 minutes until the meat is tender.
3. Add Tomatoes and Pepper
Blend the tomatoes, onions, and peppers. Add to the pot and cook for about 10 minutes. Add a tablespoon of tomato paste if you prefer a deeper color and taste.
4. Add Groundnut Paste
Mix the groundnut paste with warm water until smooth, then pour into the pot. Stir continuously to prevent lumps.
5. Simmer and Cook
Let the soup simmer for 30–40 minutes on low heat, stirring occasionally until the oil rises to the top and the soup thickens.
Serve hot with fufu, rice balls, or any preferred accompaniment. Groundnut soup is rich in protein, healthy fats, and essential vitamins.
